HAPPY FALL! Today Austin and I celebrated by making pumpkin protein balls. I can't help but crave everything pumpkin when the leaves start falling. These were the perfect whole family snack. In our vow to eat healthier and spend less this was a good happy medium.
Austin is always snacking and I needed something that would be filling, healthy and hold him over till our next meal. We had made peanut butter protein balls before so I was excited to try something new but familiar.
But decided to switch it up! We didn't have rice syrup so we subbed a little less honey and we added mini chocolate chips. To make these you simply gather all your ingredients and mix. No cooking needed. The perfect recipe for a toddler to help with! We spilled the chia seeds and oatmeal. Austin had fun stirring and mixing. He helped roll a few but I'm pretty sure he ended up eating half our mixture. We loved them and had a blast "cooking " together. Enjoy!
